Ingredients:
- ½ purple sweet potato
- 2 tbsp shredded mozzarella cheese
- 1 tbsp cream cheese
- ½ avocado
- Toasted sesame seeds or everything bagel seasoning, for topping
- 5g matcha powder
- 60ml water, heated to 175°F (80°C)
- 1 tbsp maple syrup
- 1 can Chi sparkling drink
- 1 lime wedge or slice
- Pinch of salt
Instructions:
- Steam the sweet potato: Steam the purple sweet potato until tender, then cut it into 1-inch-thick slices.
- Make the waffle toast: Sprinkle a layer of mozzarella cheese onto the bottom of a preheated waffle maker. Arrange the sweet potato slices on top, then sprinkle with the remaining mozzarella.
- Cook until crispy: Close the waffle maker and cook for 3–4 minutes, or until the cheese is golden and crispy.
- Add the toppings: Carefully remove the sweet potato waffle toast. Spread cream cheese on top, add sliced avocado, and finish with toasted sesame seeds or everything bagel seasoning.
- Whisk the matcha: Sift the matcha powder into a bowl. Add the maple syrup and hot water, then whisk until smooth and frothy.
- Prepare the glass: Pour the chilled Chi sparkling drink into a serving glass. Rub a lime wedge around the rim of a small shot glass, then dip the rim into a little salt.
- Add the matcha: Pour the whisked matcha into the prepared shot glass.
- Serve: Drop the matcha shot into the sparkling drink and enjoy the refreshing, fizzy matcha citrus combination!
