Ingredients:
- 4 sheets nori (seaweed)
- 4 garlic cloves
- 1 tbsp toasted sesame seeds
- 1 egg yolk
- 1 tsp sugar
- 1 tbsp sesame oil
- A pinch of salt
- 200g Liviva Penne
- 3 shrimp heads
- 3 shrimp, peeled and deveined
- 1 cup shimeji mushrooms
- 1 tbsp minced garlic
- 1 tbsp butter
- 2–3 tbsp pasta water, as needed
Instructions:
- Make the nori paste: Blend the nori sheets, garlic cloves, toasted sesame seeds, egg yolk, sesame oil, sugar, and salt until a smooth paste forms.
- Cook the pasta: Cook the Liviva Penne according to the package instructions. Reserve 2–3 tablespoons of pasta water before draining.
- Sauté the shrimp heads: Melt the butter in a pan over medium heat. Add the shrimp heads and minced garlic, then sauté until fragrant, pressing the heads gently to release their flavor.
- Cook the shrimp and mushrooms: Add the shrimp and shimeji mushrooms. Cook until the shrimp are pink and cooked through and the mushrooms are tender. Remove the shrimp heads if desired.
- Combine everything: Add the cooked penne and nori paste to the pan. Pour in 2–3 tablespoons of reserved pasta water and toss well to coat the pasta evenly.
- Finish and serve: Cook for another 2–3 minutes, stirring until the sauce is well combined and clings to the pasta. Serve warm and enjoy!
