Mushroom Salmon Scorched Rice

Ingredients

  • 1 salmon
  • Assorted mushrooms (oyster, king oyster, shiitake)
  • 1 cup leftover rice
  • Scallions, fried shallots, sesame seeds
  • Miso broth (1 cup water, 1 tbsp each dashi, soy sauce, sugar, 1 tbsp miso paste)
  • 1 tbsp butter
  • 1 tsp salt

Instructions

  1. Heat a pan with butter over high heat, then press rice into the pan. Lower heat to medium and cook until the bottom is golden brown.
  2. Sauté mushrooms in the same pan, seasoning with salt.
  3. Prepare miso broth: boil water with dashi, soy sauce, and sugar, then whisk in miso paste.
  4. Top crispy rice with mushrooms, salmon, scallions, fried shallots, and sesame seeds. Drizzle with miso broth (2-3 tbsp).
  5. Mix well and enjoy!
