Ingredients
- 2 cups rigatoni pasta
- Water (for boiling)
- 1 tsp salt
- Olive oil
- Salt and pepper
- Parmesan cheese
- 1 tomato, diced
- 1 shallot, chopped
- Cilantro, chopped
- Melted cheddar cheese
- 1 cup guacamole
Instructions
- Cook Pasta: Boil rigatoni in salted water until al dente. Drain.
- Season and Bake: Transfer pasta to a baking pan. Toss with olive oil, salt, pepper, and Parmesan. Place pasta on a baking sheet.
- Bake: Bake at 400°F for 25–30 minutes, keeping a close eye to prevent over-crisping.
- Prepare Toppings: Warm cheddar cheese and mix tomato, shallot, and scallions for a quick salsa.
- Assemble: Top the baked rigatoni with melted cheese, salsa, and a generous scoop of guacamole.
