Crispy Fried Enoki Mushroom
Ingredients
- 2 packs Enoki mushrooms
- Cooking oil
- 1/4 cup basil
- 8-10 garlic cloves (adjust to preference)
- Chili seasoning (to taste)
Batter
- 158g cornstarch
- 79g all-purpose flour
- 1 tbsp yeast
- 1/2 tsp salt
- 1/4 tsp white pepper powder
- 1/2 tsp five-spice powder
- 1/2 tsp baking powder
- 2 tbsp chopped scallions
- 340g cold water (adjust as needed for desired batter consistency)
Instructions
- Mix all batter ingredients well and refrigerate for 20-30 minutes.
- Cut the Enoki mushrooms laterally into thin strips.
- Dip the mushroom strips in the batter, then use a chopstick to squeeze out the excess.
- Place the mushrooms in a pan with hot oil and fry until golden brown.
- Fry the basil and garlic in the oil and then remove them.
- Plate the fried mushrooms and garnish with the fried basil, garlic, and chili seasoning.
