Ingredients
- 7 slices cold smoked salmon
- ½ avocado
- ½ cup sushi rice
- 1 tbsp tobiko (flying fish roe)
- 2 sheets nori
- 1 cucumber
- Toasted sesame seeds for garnish
Instructions
- In a lunchbox, start by layering the cold smoked salmon on the bottom. Arrange avocado slices evenly on top, followed by a layer of sushi rice, then sprinkle with tobiko.
- Place one sheet of nori on top, then layer cucumber slices, more rice, and finish with the second sheet of nori.
- Press the layers firmly so everything holds together.
- Flip the lunchbox upside down so the sushi can slide out.
- Cut into bite-sized pieces, sprinkle with toasted sesame seeds, and enjoy!
