Ingredients
- 3–4 cloves garlic
- 2 slices ginger
- 1 small (about 1-inch) mala hotpot spice block
- 2 cups water
- 2 cups milk
- 1 bunch enoki mushrooms
- 3–5 shrimp or beef balls
- Bean curd
- 5 slices lotus root
- 4–5 slices potato
- 2 shiitake mushrooms
- 5 mini sausages
- 3 pieces fried tofu
- 2–3 bok choy
- Cilantro
- Instant noodles
- Peanut sauce: 1/4 cup peanut butter + hot water + 1 tbsp soy sauce
- 1 tbsp cooking oil
Instructions
- In a hot pot over medium heat, add cooking oil and sauté garlic and ginger until fragrant. Add the mala seasoning packet and hotpot spice block, and stir-fry until aromatic.
- Pour in water and milk, then bring to a boil.
- Add enoki mushrooms, shrimp/beef balls, bean curd, lotus root, potatoes, shiitake mushrooms, sausages, and fried tofu. Cover and bring back to a boil.
- Add bok choy, cilantro, and instant noodles last.
- Cook for about 3 minutes, or until noodles are done.
- Drizzle with peanut sauce at the end and mix everything together. Enjoy!
