Ingredients
- 2 mangoes, diced
- 2 cups yogurt
- 1 tbsp honey
- 1 tsp vanilla extract
- 1 cup white chocolate
- 1 tbsp coconut oil
- 2 tbsp matcha powder
Instructions
- In a bowl, mix together the yogurt, honey, vanilla extract, and diced mango until well combined.
- Scoop the mixture onto a lined baking sheet using a large spoon, shaping into cookie-like rounds. Freeze until fully solid (preferably overnight).
- For the matcha coating, melt the white chocolate and coconut oil together using a double boiler or microwave in 20-second intervals, stirring until smooth. Mix in the matcha powder until fully incorporated.
- Remove the frozen mango yogurt bites and dip each one into the matcha chocolate coating.
- Place them back on the tray and freeze for another 15 minutes, or until the coating is set.
