Grilled Hamachi Collar

Ingredients

  • 1 hamachi collar
  • 3 tbsp fish sauce
  • 2 tbsp soy sauce
  • 1 tbsp yuzu juice
  • 1 tbsp ginger
  • 1 tbsp garlic
  • 1 tbsp lemongrass
  • 3 kaffir lime leaves
  • 2 Thai chilies
  • 1 tbsp brown sugar

Instructions

  1. In a bowl, combine the fish sauce, soy sauce, yuzu juice, and brown sugar until well mixed.
  2. In a blender or mortar and pestle, grind the ginger, garlic, lemongrass, Thai chilies, and kaffir lime leaves into a paste.
  3. Add the aromatic paste into the sauce mixture and stir to combine.
  4. Add the hamachi collar, making sure it’s fully coated, then marinate overnight for best flavor.
  5. When ready to cook, preheat the oven broiler. Place the hamachi collar on a tray and broil for about 7 minutes per side, watching closely to ensure it’s nicely caramelized but not burnt.
