Chili Peanut Pasta

Ingredients

  • 2 tbsp peanut butter
  • 1 tbsp shallot, finely chopped
  • 1 tbsp ginger, minced
  • 5–6 garlic cloves, minced
  • 1 tbsp scallions, chopped
  • 1 tbsp toasted sesame seeds
  • 1 tbsp chili flakes
  • 1 tbsp chili oil
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tsp vinegar
  • 1/4 cup high-heat oil
  • Spaghetti
  • 2 tbsp parsley, chopped

Instructions

  1. Cook the spaghetti according to package instructions. Reserve a bit of pasta water, then drain and set aside.
  2. In a pan, combine peanut butter, shallots, ginger, garlic, scallions, sesame seeds, chili flakes, chili oil, oyster sauce, soy sauce, and vinegar.
  3. Heat the oil until very hot (around 350°F). Carefully pour it over the mixture to bloom the aromatics, then stir until well combined.
  4. Add the cooked pasta to the sauce and toss until evenly coated, adding a splash of reserved pasta water if needed to loosen the sauce.
  5. Finish with chopped parsley and serve immediately.
