Frozen Mango Matcha Ice Cream

Ingredients:

  • 1 ripe mango
  • 3 tbsp kefir, milk, or heavy cream
  • 1 tsp ceremonial-grade matcha powder

Instructions:

  1. Cut the mango in half and remove the pit.
  2. Wrap both mango halves tightly with plastic wrap. Place one half in the freezer and the other half in the refrigerator.
  3. Freeze the mango overnight, or until completely firm.
  4. When ready to serve, dice the chilled mango half into small cubes and set aside for topping.
  5. Whisk together the matcha powder and your choice of kefir, milk, or heavy cream until smooth.
  6. Remove the frozen mango half from the freezer and slowly pour the matcha mixture over it. Using a spoon, gently scrape and churn the frozen mango flesh into the liquid as it softens.
  7. Continue churning until the mixture becomes thick, smooth, and creamy, with a Ice cream consistency.
  8. Serve immediately and top with the fresh mango cubes for extra sweetness and texture.
